Recipe: Grilled Whole Trout

I used to be a regular fisherman and more recently I've become a regular Costco shopper. Seemingly unrelated except that every time I go to Costco I spend most of my time looking at their meat and every week I ogle at their fresh trout. Completely unrelated to this post, if you Google "ogle" it gives you this gem:

synonyms: leer at, stare at, eye, make eyes at, check out;

1) Who doesn't know what ogle means but knows what lecherous means? 2) Normal people ogle boobs and I "make eyes at" fish.

Back to the recipe, I finally pulled the trigger and bought a package of trout (again, not a way to say that in a normal sounding way) to my wife's confusion.

Step 1. Debone the Fish

This is one of those foods that seems like a daunting task, but is sure to impress guests and you're really only going to mess it up once. I highly recommend watching a video on this and one day I'll make one of those, but for now here's someone else explaining it in a helpful/not boring way.

Step 2. Stuff the Fish

For this you'll need a lemon, an onion and salt and pepper. Don't over think it.

  • Cut your lemons into thin slices and your onions into rings

  • Lightly salt and pepper your fish

  • Layer your lemons, onions and dill on fillets

Step 3. Grill the Fish

This is sort of grilling, sort of broiling on a grill? 350F, 10 minutes each side using in direct flames. And you're done. Ooo. Ahh.

Depending on the grill you're using, you may want to spray or oil your grate (or use a cast iron or other pan) so your fish won't stick. I didn't have any trouble without this step, but I've heard of people having this problem.
